Are limited versions of Breilings legitimate 'collector' pieces with an historic purpose (ie. tribute to the Aurora 7 mission), or just a strategic way to stir up desire in the marketplace?

Seems to be that there are many limited releases of late and wonder the effect on the consumer. When I see the word 'limited', I seem to be more attracted to the piece.

Lastly, what is/are the differences between the B01 vs. B02

The limited editions are typically associated with some theme or event or even no association at all.
The Cossie you are referring to was released to commemorate the 50th anniversary of Scott Carpenter orbiting the Earth three times in his Aurora 7 Capsule.
This was quite a milestone for Breitling as well as Scott wore a special Navitimer with a 24 hour dial during his flight.
Now, do the LEs have any significant value as collectors items? Only to the ones that really want one.
Some LEs might a be a little more sought after than others but in general if you want one bad enough you will most likely find one and they do not necessarily go for a much higher premium (most of them anyway).

As for your second question, the B02 is basically a B01 minus the auto winding module.
It is a manual wind version of the Breitling B01 in-house movement.
