I'm not 100% sure why Breitling chose to use thinner bars for the bracelet, but I would assume it's probably to ensure that there is enough metal left in the end-link to be strong enough. If they used much thicker bars, the hole in the end links would have to be bigger (i.e. less metal left) and I guess that could compromise the strength and reliability of the bracelet. Or the end links would need to be thicker which may not be aesthetically pleasing.

However I do know why Breitling use thicker bars for straps - it's to prevent the bar from cutting into the leather too much. If you imagine if you could make a spring bar as thin as a piece of fishing line, it would cut into the leather extremely quickly and thereby shorten the life of the strap. The thicker the bar, the more the load is spread, and the better it is for extending the lifespan of the strap.
