I like these questions, even though I know I'm going to think of dozens more as soon as I've submitted my answer. So I'll just put the first 5 that come to mind, which may have been influenced by how recently I watched them.

Unforgiven (this is definitely number 1)
Cool Hand Luke
The Big Lebowski
Pan's Labyrinth
Casino Royale (I know, I know, but I think Daniel Craig is great as Bond)

Knew I'd forget something! I left number 2 off the list - Dirty Harry. Big Clint fan here - and I'm going to his hometown the day after tomorrow.

I don't know that I can put them in order b/c I seem to constantly change my mind, but here are some of my favorites:

When I originally started watching it I almost turned it off because I thought it was so piss poor edited. But then, 20 minutes in it got very good real quick!

A few people put down Top Gun...now I love that movie but Tom Cruise has recently begun to annoy the crap out of me so I left it off.
