I was reading in my Skyland instructions manual that you must not change the time and/or date on this watch between 8pm and 2am. Can anyone explain why? Can I wind back the time and date?

Lot's of threads on this here but briefly I believe it is something to do with the mechanism that changes the date and that is can potentially be damaged by moving it backwards whilst it is chaniging over. I think though, and I stand to be corrected by those more knowlegable, that it is fine if you turn the movement forward, just backwards could cause potential harm.
I know we have just entered daylight savings here in Canada. I always make it a practice to alter my watch around 7.0pm the previous evening so I wake up with the correct time the next day!

You can wind time forward, you should not wind time backwards or use the quickset date function - and it's generally 8pm to 3am.

The reason is that the date change mechanism is partially engaged with the time mechanism during this period and it is very easy to strip the teeth on the partially interlocked wheels. Whenever you see a watch that seems to be stuck part way between two dates this is the most likely cause.

So the correct way to bring the watch an hour back would be to wind the watch forward, never back, correct? Also, how do I make the minute hand show the exact minute after the seconds hand has gone 60 seconds? In other words I want the minute hand to be showing a minute after the seconds hand hits 60 seconds.

Yes, always move forward. Sometimes, if you try to change the date when its near midnight, you will feel strong resistance that doesnt allow you to change it. Im sure you can force it if you want trouble, but ive never done that. You just have to change the time forward an hour or so, and then do what you like.

I dont really understand your other question, but I guess you asking how to get the minute hand and second hand synchronized, right? Just pull out the crown exactly as the second hand hits 60 to stop it from moving. Adjust your minute hand to precisely where you want it to be, and push the crown back in carefully. It can be tough to get it aligned perfectly, but with a steady hand you can get very close.

In terms of winding back an hour, the easiest thing to do is simply wait until the indicated time is outside of the 8pm - 3am window before and after the adjustment.
