Several things like complication of the movement, in house movements, quality of the craftsmanship, rarety of the brand, name brand itself, catering to the elite* ect....

T*hat last one I put in there to act as a comparison to the publics view of an item both as a fashion statement and as a prestige item. For example: most people can only name Rolex as a luxury watch, I can name 25 off the top of my head. I own quite a few luxury timepieces and none of them say Rolex on them. My friends dont understand "what kinda what is that?" without me saying somthing stupid like, "Its a Breitling.........its similar to a Rolex." "Oh. why didnt you just buy Rolex?" I am not buying my watches for anyone else but myself. They would buy a Rolex just to impress others.

Remember also that a lot of those are made in relatively small numbers so each piece has to cover a higher percentage of the overhead for R&D, corporate functions, etc.

Of course there is also the whole supply and demand thing - they could produce more if they wanted to, but keep production volumes low in order to push prices high.
