For watches with a date function, how does the manufacturer know when it is midnight to ensure the watch hands are accurate with the date function? Or is this why the "danger zone" is so wide on non instant date change movements?

When I do a mod ( lets say Seiko) I just set the crown in the 3rd position or time setting position and turn it until they date wheel changes dates and then press or set the hands in at the 12 o'clock position!!
