How does Sapphire stack up to new glass tech? Is there a point when "gorilla glass" or similar could outperform Crystal for watches or is there something atomically different?

No expert on gorilla glass but given that sapphire crystal is second only to diamond in terms of hardness I wouldn't expect changes anytime soon.

Never heard of Gorilla glass on a watch. Gorilla glass and Gorilla glass II, made by Corning Wear, is used on cell phone LCD screens.
