So one one of my Chronos is gaining over a minute a day. Is that a sign of needing servicing or something that would be fixed during a service? What is the likely cause (for my own education)?

Could be caused by a million different things. Technically the amplitude of the balance spring is too low, increasing the frequency and therefore the watch gains. It may be a sign of a worn out mainspring and / or friction in the running train that is reducing the energy that reaches the escapement, but......

It may simply be a case of it being magnetised. First step is to get a watchmaker run it through a demagnetiser which takes about 2 seconds and see what the rate is then.
