I have small, barely noticeable scratch in the middle of my watch glass. Is it possible to fix?

I dont know if it is actually is on the sappire glass or if it is on the AR coating but if it is, is it possible to remove the AR and apply a new coating?

And if this is possible must i use a proffesional to do it, or is it something i can do by myself?

It will be in the AR coating.

You can remove the AR coating yourself using something like cape cod cloths (search function will tell you all about them), but recoating is harder. Breitling don't bother replacing the AR, they just replace the crystal.
