I have recently aquired an older model Chronomat. I like the way the second hand moves when the chronograph is on. Is it save to leave it on all the time or could this damage the watch? Thanks.

No problem at all.

It will reduce the power reserve slightly, and will cause marginally more wear on the movement, but the impact is negligible - you'ld not notice it in the real world.
