quick question: what does that little hand with AF on one side of it mean/do?

That one is there to make small adjustments if the watch is a bit too fast/slow. A/F stands for (if I'm not wrong) Advance (French)/Faster (English). Under the hand in the movement you'll find the letters R/S (if I remember correctly), standing for Retarde (French again)/Slower (English).
