I really like the Breitling chrono watches with the dials, but I also like a second hand to have a sweeping motion.

How can I tell which models have the sweeping motion?

All automatic watches (Breitling and others) have a sweeping second hand (if they have a second hand, that is) unless the watch has a deadbeat seconds complication.
