From what I was told from my AD, you should only change the time in a clockwise direction. |

I think you won't do any harm by moving the hands backwards if you are not doing that between 8pm and 3am. |

I might come out as really stupid here, but isn't the above stated only for watches with quick-date function? The reason for my question, my former AD actually advised me for a "non-quick-date-watch" that I would go back and forth between 8-3 to conveniently set the date. |

I tend to assume that's what people are talking about as most watches have a quickset date these days, but watches without the function can be wound back and forth across midnight to change the date. It always used to be only a few minutes either side, but with the Legende it does need to be a longer period. |
