You're obviously not talking to the right people if "everyone" is telling you Rolex is the best!
But you're in the right place now! 
No in all seriousness, Rolex do make quality watches (especially now they have sorted out their tin-foil bracelets and clasps! 
), and they are without doubt the most widely recognisable prestige watch brand in the world...... but for most of us, that's not necessarily a good thing!
OK, so onto your question. The Chronomat (they've actually dropped the "Evo" part now) is more expensive because it is a more finely constructed case and dial. The SA is more simple - not that that is a minus point against the SA, it's just that the two watches are different ; the SA is more sporty, whereas the Chronomat is slightly more dressy and refined.
They both have the same shine, and they both even have the same movement. The main noticeable difference is the size. While the difference on paper is only around 4mm, it makes a hell of a lot of difference on the wrist. The SA is also very thick, so stands up on the wrist a way. It's a definite case of "try before you buy"! (That's true of any watch, but even more so with the SA).
Which one do we prefer? Well, it's exactly that - it's a personal preference, plain and simple. The SA is very popular at the moment, but the Chronomat has long been Breitling's best selling range. Go for the one you like the most. The good news is you can't go wrong with any Breitling!
