People sometimes block the serial out for fear of fake-maker's using their serial number on a fake watch. Additionally some people fear that others could use the serial number (along with then knowing which model of watch it relates to), to request genuine documentation from Breitling, such as COSC documents etc. In practice this is highly unlikely as Breitling would always want to examine the actual watch before releasing a new COSC doc, but the very VERY slight possibility is enough to make people block the number off. It's kind of like a far more paranoid version of blocking your car's number plate in photos of your car!
In terms of buying a watch that is shown with a blocked serial in photos, then there's no problem as far as I can see, and besides, any serious seller will release the serial to a serious buyer before purchase if asked to.
