Looking at picking up a Chronomat 44 but not sure which black dial.

Can someone tell me the difference between Carbon Black and Onyx Black?

Would be very helpful if someone had some real life pictures because the ones on Breitling don't really show the dials too well.

If you're asking the difference in the actual black colour itself, onyx is richer, almost gloss like whereas the carbon is as it sounds, more towards a dark graphite.

If you're asking the difference in the dial, there are many differences. Sub Dials, Chapter Ring, Date Window, etc:

I have the Chronomat 44 'Flying Fish' which is classed as onyx, but is black throughout, no silver sub dials or chapter ring with the addition of red chronograph hand and red 500m text:

Look in the for sale section, and I have real world pictures of an Onyx Dial Chronomat 44 along with my sale ad. The dial is a pitch-black glossy affair, with texture in the middle square. The dial sometimes appear to be a dark navy blue, depending on the light, but that's purely because of the anti-reflective coating. Viewed straight on under good light, you can see that it is a perfect, glossy pure black.
