My wife's eyeglasses are also coated with some sort of AR stuff and I remember the optician said to be espacially careful to avoid contact with great heat, such like when you open the baking oven.
Does this also apply to my Breitlings AR coating?

Never done any of mine any harm and theyve gone in and out of the oven hundreds of times, not to mention over the BBQ or hob.

I don't know if this factors into it at all, but most prescription eyeglass lenses are a form of polycarbonate (i.e., plastic), and themselves might be adversely affected by heat. Are you sure the optician was referring specifically to the coatings, and not the lenses themselves?

If this were so for watches, I'm sure we would have heard of it before.

I was going to say exactly that - i.e. there's got to be a difference between plastic and sapphire crystal in this respect.
