One of my breitling watches changes the date at 11:54pm. Is this normal or something that needs attention?

My chrono superocean changes the date at the same time but day changed at about 12:05. Five minutes past midnight.

It's fine.

The date changes take a while because of the way that the mechanism engages with the running train, and the point where the visible piece happens isn't hugely relevant if it's only a few minutes either way. Day and date change being offset is to balance the amount of torque required in the movement - the amount of power needed to do both together would be excessive.
