The answer is actually both. To use the Cockpit Lady as an example, the rider tabs are solid, and I believe that the crown is also solid. The bracelet is rolled, but don't be too concerned that it is going to wear off like electroplating will.
Rolled gold, as you note, is 20 microns, but in addition to that it is a very different technology than electroplating. Rolled gold is created by laminating a sheet of 18K gold to a base metal and then rolling it out, very different to the electroplating that deals with particles of gold rather than sheets. Electroplating also uses much softer 24K gold.
