I'm thinking about having a watch DLC'd, and am really paranoid about the long term quality of the finish. One guy that I spoke to basically said that they could "re-DLC" the watch for about 30% of the original cost of the process, or they could remove the coating for the same price. Has anyone seen what a watch looks like after DLC has been removed? Thanks.

It shouldn't matter. They can rebrush, polish, bead-blast or whatever after it's been taking off. Now, they may take off the coating for 30% the original cost, but they may not restore it to the original finish for that amount. Either way, steel can pretty much always refinished to whatever you want it to look like.

Lots of people polish watches that were originally brushed, or vice versa. The coating is just superficial.
