A lot of times i see at the sell and buy section that the yellow papers from a breitling has not been filled in, like the purchase date and year... why is that? thought that a retailer always did that...

Sometimes some retailers "forget" to fill it in as a "favour" to the customer. In other words if the customer has a problem 2 years and 1 day after purchasing it, if the AD had filled in the date, they'd be out of warranty. By not filling it in it allows the customer to add their own suitable date and thus get the work done under warranty.

Obviously Breitling take a VERY dim view of this!

Also, some grey market watches do not have the date filled in as the watch was never sold to a 3rd party (the grey market dealer) and not a customer by the AD.

Up tou you but breitling my not honnour any waranty claim unless you van prove ehere and when you bought it with a receipt and may punnish the dealer for not writing that information in.
