I returned my watch to InTime service and now understand that it requires a new centre seconds wheel. I'm not sure what this is, so would love to know if it was this causing my watch to run erratically.

Probably. That is the wheel that drives the seconds hand so problems there would affect accuracy and smoothness of the seconds sweep.
