Given the two options I'd say it's always better to keep a mechanical watch running, so IMO you'll be better off giving it a wind every few days rather than letting it run down. Any time you have to do anything in terms of time setting, you open the door to the possibility (however remote) of something going wrong - gears not meshed properly, etc - so IMO it's better to avoid that if possible. Additionally keeping a watch wound will ensure all the oils are nicely distributed throughout the movement.
Alternatively you could just wear your SA in the evenings and that should keep it going during the week.
Or lastly it could be an option to invest in a fairly cheap watch-winder to keep it going. If you go that route, do a search on here for winders to get an idea of what to look out for in a winder.
